Yellowtail fillets in olive oil, excellent for seasoning your dishes and as a fresh main course for a salad or with oil and lemon.

Description

The Yellowtail, taken from the refrigerated cell, is cut, bled in running water, placed in stainless steel baskets AISI 316, and cooked not by steaming but in water and salt to preserve its sensory qualities and prevent the loss of most of the proteins. After cooking, the product is cooled, and a meticulous skinning and removal of bones are carried out manually. The cleaned fillets are then cut into pieces and placed inside glass jars of various sizes or in large jars for catering use. This is followed by filling the containers with olive oil or water, if the product is requested natural, sealing the lids with an automatic capping machine, sterilizing, and washing the packages. The final phase involves labeling the jars with an automatic labeling machine, packaging the containers in shrink-wrapped packs, and storing them in dedicated facilities.
