Description

The mackerel, taken from a refrigerated cell, is cut into fillets, bled in running water, placed in stainless steel baskets (AISI 316), and cooked in water and salt, not steamed, in order to maintain its sensory qualities and prevent the loss of most of the proteins. After cooking, the product is cooled, and a meticulous skinning and removal of bones are carried out manually. The resulting fillets are placed inside glass jars and cans of various sizes. This is followed by filling the containers with olive oil or water (if the product is requested natural), sealing the lids with an automatic capping machine, sterilizing, and washing the packages. The final phase involves labeling the jars with an automatic labeling machine, packaging the containers in shrink-wrapped packs, and storing them in dedicated facilities.
