Grilled Mackerel in Olive Oil

Grilled Mackerel Fillets compacted in olive oil in 125g format. Excellent as a main course or to create new dishes. No added starches or preservatives.

Description 

The Mackerel, taken from the refrigerated cell, is cut into slices, bled in running water, placed in stainless steel baskets (AISI 316), and cooked in water and salt, not steamed, to preserve its sensory qualities and prevent the loss of most of the proteins. After cooking, the product is cooled, and a meticulous skinning and removal of bones are carried out manually. The fillets obtained are then placed inside glass and milk jars of different sizes. This is followed by filling the containers with olive oil or water (if the product is requested natural), sealing the lids with an automatic capping machine, sterilizing, and washing the packages. The final phase involves sealing in dedicated packs with dedicated automatic machinery and packaging in shrink-wrapped packs stored in dedicated facilities.
